I'm a vegetarian and this looks amazing! I've never eaten parsnips before either - what do they taste like? Okay, this is my kind of recipe - easy and yummy. I'm going to try it.

I made it tonight and it was delicious! I made meatloaf and then the vegie recipe here. Great combo!

I always make meatloaf in large muffin tins (the 6 count ones), that way they are individual size and they cook a lot faster. :)

Booklogged - Oh man, you were there?! I would have LOVED to have gone. I had so much on the calender yesterday that I was running from one thing to the next with out of town family here as well. I was really sad that I missed it.

Thanks everybody for the comments. As always, much appreciated. Come back and tell me when you've made the dish. I'd love to hear!

I love roasted vegetables but I've never tried parsnips or turnips. Sounds delicious!

I heard Sara Zarr yesterday at the book festival. She and Shannon Hale talked conversation style and were hilarious. Loved it!

Yum. I need to go and get some chicken breasts this week to make with this. I also like squeezing the juice of a lemon or two over my roasted veggies, really helps the salt bring out the flavor.

I have never found a turnip I liked- but this recipe does make them look tasty! Will have to try it out- thanks for sharing! (Parsnips and rutabagas are strangers to my plate, as well).

I have wanted to try roasting veggies for a long time now but it seemed too easy to be true. What a fun addition to the read-a-thon!
